Maurizio Morelli began his career studying at Hotel School in Latina near Rome, his home town. Each winter he studied and in the summer months worked the season in various hotels and restaurants throughout Italy. One of the hotels was the five star Hotel Hassler Villa Medici in Rome, and as soon as he qualified he was immediately offered a position. He stayed with The Hassler for two years and learnt a much disciplined traditional style of cuisine from the kitchens of this deluxe hotel.

Time magazine said of the restaurant, a delight, no gimmicks, no fused with anything just attention paid to getting the dishes, wine list and service right.
