for true connoisseurs and lovers of Ravioli pasta, chef Maurizio Morelli has introduced a menu solely dedicated to this Italian favourite.

Ravioli is a sophisticated dish with huge complexities and the time it takes to produce each individual piece warrants respect. The origins of the dish are sometimes confusing and some say it is derived from the Italian word “rabiola” which is a small turnip. Others believe it was invented by a cook called Ravioli who created dishes for the Genovese nobility. Whatever the origin it is the ingredients for the filling that tempt the gourmet’s palate, and these hidden interiors vary from family to family and region-to-region.

The uniqueness of Morelli’s ravioli lies in his light home made pasta. Using only 30g of pasta per portion, the menu offers the equivalent carbohydrate of a normal plate of spaghetti. The pasta in the ravioli is almost distributed like a garnish and the beauty and enjoyment of the meal is discovered in Morelli’s skill in producing tantalising centres for the diner to uncover.
